If you’re looking for a colorful side dish to serve at Thanksgiving, look no further than these maple roasted carrots!
Peel and optionally trim the carrots, leaving some green tops for presentation. Place them in a baking dish or tray, slicing larger carrots into strips if needed.
Whisk together the remaining ingredients, pour over the carrots, and toss to coat before roasting.
Garnish with pomegranate, parsley, pistachios, and feta, and optionally serve over hummus.
