Preheat the oven to 350°F. Line a 9x5 loaf pan with parchment paper. Blend bananas until smooth (1 1/2 cups). In a large bowl, whisk together all wet ingredients. Add dry ingredients (except carrot), spooning and leveling flours.
Fold in the carrot. Transfer to the loaf pan and bake for 55-65 minutes or until a toothpick comes out clean. Let it cool in the pan for 20 minutes, then transfer to a wire rack to cool completely.
Beat room temperature cream cheese for 30 seconds with an electric mixer. Beat in sugar and vanilla until smooth, adding a splash of milk as needed to thin. Once the loaf is completely cooled, top with frosting and crushed walnuts. Slice and enjoy!
