Made in just one bowl and super fluffy, these coconut flour pancakes are the perfect weekend breakfast. They’re paleo, grain free and naturally gluten free.

Whisk together all wet ingredients in a mixing bowl.

Add dry ingredients and whisk until smooth batter forms.

Heat a large pan over medium/low heat and lightly grease with oil. Pour about 1/4 cup of batter onto the pan, spreading it into a circle with the back of a spoon.

Cook each side, adjusting heat as needed. Repeat until all batter is used. Serve with maple syrup and berries.
