Ready in just 15 minutes, these Thai Red Curry Noodles are the perfect simple dinner recipe. They’re naturally vegan, gluten free and pair perfectly with steamed veggies and your choice of protein!

First, make the sauce. You'll need:

3-4 tbsp red curry paste  3 tbsp tomato paste 1-2 tbsp soy sauce 4  cloves garlic 1 tbsp grated ginger 1 tbsp olive oil 2 tsp maple syrup  1 lime  1 tsp cornstarch

Toss with your cooked noodles of choice. I like rice noodles to keep it gluten free.

Serve as is or with added veggies or protein like chicken, tofu or salmon.
