These vegan pumpkin cookies are soft, perfectly sweet with just the right amount of pumpkin spice. Not to mention they’re vegan, gluten free and surprisingly healthy.
First, beat together the wet ingredients, then fold in the dry ingredients.
Scoop into balls, then flatten with your hands.
Bake for about 10 minutes or until the cookies spread and have crackly tops.
