Preheat the oven to 350 Fahrenheit and line an 8×8 pan with parchment paper. Combine 1 cup of chocolate chips with coconut oil, melt in the microwave, and set aside.
In a separate bowl, beat eggs and coconut sugar, then mix in vanilla and melted chocolate. Add dry ingredients and beat until smooth, then fold in remaining chocolate chips.
Pour batter into the pan and bake for 22-28 minutes. Let cool in the pan for 10 minutes before slicing and serving.
