This gluten free cookie cake is rich, full of chocolate chips and perfect for a party. It’s soft, chewy and always a hit! Dairy free friendly and easy to make.
To prepare chocolate chip cookie bars, preheat oven to 350°F and line a 9-inch springform pan with parchment paper.
Cream butter and sugars, add egg, egg yolk, and vanilla, then mix in flour, baking powder, and salt. Fold in chocolate chips, transfer to pan, press evenly, and bake for 28-32 minutes until set and golden.
Let cool, then serve as desired.
