Gluten Free Oatmeal Chocolate Chip Cookies

These gluten free oatmeal cookies are chewy yet crispy and filled with melty chocolate chips. They’re made in one bowl, nut free and even dairy free. A totally crowd pleasing recipe!

– butter  – white sugar – dark brown sugar – egg – vanilla extract – gluten free all purpose baking flour – quick oats – baking soda – baking powder –salt –cinnamon – chocolate chips

INSTRUCTIONS

In a large mixing bowl or stand mixer, cream together butter and sugars. Beat in vanilla and egg. Fold in dry ingredients and chocolate chips. Chill dough for 30 minutes.

Preheat oven to 350°F. Scoop dough into balls using a medium cookie scoop. Press extra chocolate chips on top. Bake for 10-14 minutes until edges are golden brown.

Use a cookie cutter to create a perfect circle around the edge. Cool completely, sprinkle with salt flakes, and enjoy!
