Ensure eggs, yogurt, and butter are at room temperature. Preheat oven to 350°F. Cream butter and sugar, beat in eggs and extra yolk, then add vanilla, almond extract, and Greek yogurt.
Fold in dry ingredients. Transfer to a lined loaf pan, spread evenly, and bake for 60-70 minutes until a toothpick comes out clean. Cool in the pan for 15 minutes, then transfer to a wire rack for at least 1 hour.
