HEALTHY SWEET POTATO MUFFINS
These sweet potato muffins are the perfect Fall snack! They're moist, fluffy, made in one bowl and surprisingly healthy. These gluten free muffins are the perfect mid-day snack.
First, whisk together all wet ingredients. This includes:
eggs sweet potato puree coconut sugar vanilla coconut oil
Fold in the dry ingredients, this includes:
oat flour almond flour cinnamon baking powder baking soda salt
Add to a muffin pan and top with cinnamon streusel
Bake until a toothpick comes out clean.
These muffins are gluten free, healthy, refined sugar free and so easy to make!
