First, cream together the dairy free butter, egg, sugar, vanilla, lemon juice and zest.

Fold in the dry ingredients until a dough forms.

Scoop into balls and add to a lined baking sheet.

Bake until the edges are just golden brown. 

Drizzle with a sweet & simple lemon glaze if desired!
