LEMON POPPY SEED OVERNIGHT OATS

PREP TIME: 5 minutes CHILL TIME: 1 hour SERVES: 2 DIET: vegan, gluten free

INGREDIENTS:

1 cup rolled oats 1 cup cup non-dairy milk* 1 tbsp poppy seeds 1-2 tbsp  maple syrup 1 tsp vanilla  1/4 cup coconut yogurt Juice from 1  lemon  Pinch of salt

Combine all ingredients in a bowl.

Transfer to jars to let set in the fridge.

Serve with fresh blueberries and coconut flakes and enjoy!
