Preheat the oven to 350°F and prepare a 9x5 loaf pan by spraying and lining it. Puree 1 1/2 cups of bananas in a large mixing bowl. Whisk in all other wet ingredients until smooth. Add and whisk in dry ingredients, then fold in chocolate chips or walnuts if desired.
Transfer the batter to the loaf pan, top with additional chocolate chips if preferred, and bake for 55-65 minutes until a toothpick comes out clean. Note that almond flour may cause the top to brown faster, and you can tent with foil if needed.
Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack for at least 1 hour before slicing. Enjoy as is or with melted butter or nut butter.
