First, make the sauce. You'll need:

3-4 tbsp red curry paste  3 tbsp tomato paste 1-2 tbsp soy sauce 4  cloves garlic 1 tbsp grated ginger 1 tbsp olive oil 2 tsp maple syrup  1 lime  1 tsp cornstarch

Toss with your cooked noodles of choice. I like rice noodles to keep it gluten free.

These Thai red curry noodles are vegan, GF and  ready in 15 minutes!

Serve as is or with added veggies or protein of choice like tofu or chicken.
