This cold Thai noodle salad recipe is an easy gluten free and plant-based dinner that is ready in less than 30 minutes!

INSTRUCTIONS

Boil salted water and cook noodles as per package instructions. Slice vegetables into thin strips, using a mandoline for cabbage and a food processor for carrots.

Rinse cooked pasta with cold water and place in a serving bowl. Add vegetables and mix.

Pour half the sauce over the pasta, mixing and adding more until desired sauciness is achieved.
