VEGAN THAI  RED CHICKPEA CURRY

First, saute the onion and garlic with olive oil.

Add in the tomatoes, curry paste and spices and let simmer.

Add in the chickpeas and simmer until thick and creamy.

Serve over fresh white or brown rice with chopped cilantro.
