Prep Time: 10 minutes Cook Time: 20 minutes Serves: 4  Diet: Vegan and Gluten Free

First, saute the onion, garlic, carrot and celery.

Add all remaining ingredients and simmer for 20 minutes.

Blend 2 cups worth of soup, then transfer back into the pot.

Serve with your favorite bread or enjoy as is! This recipe is freezer friendly, so make a big batch for meal prep!
