Vegan Chickpea Burgers

These vegan chickpea burgers are the easiest and most flavorful veggie burger. They take only 10 minutes of prep time and can be frozen for quick meals throughout the week!

Chop onion and mince garlic, then sauté in olive oil for 5-7 minutes until onion softens and garlic browns slightly.

Transfer to a food processor. Drain and rinse chickpeas and add to food processor with remaining ingredients. Pulse about 15 times until combined with some chunks remaining.

Adjust moisture with 2 tbsp quick oats if needed. Form mixture into 4 patties using a large cookie scoop or by hand.

Bake for 20 minutes, flip, then bake another 15-20 minutes until firm.

Let cool slightly and serve on a bun with desired toppings like lettuce, tomato, avocado, and spicy tahini dressing.
