VEGAN PUMPKIN PIE
This vegan pumpkin pie is rich, creamy and so easy to make. With just a few simple, pantry staple ingredients, this is the only recipe you need this Fall! I promise you’ll never know it’s vegan.
First, make the gluten free pie crust and bake for 5 minutes.
For the filling, you'll need:
pumpkin puree, cashews, coconut milk, sugar, maple syrup, cornstarch, vanilla, pumpkin pie spice, salt
Bake until firm, then chill for at least 4 hours to set.
Serve with coconut whipped cream or ice cream.
