White Bean Chicken Chili

This white chicken chili is a one pot, easy to make high protein dinner the whole family will love. Perfect for a cozy winter meal or meal prep recipe!

INSTRUCTIONS

In a large pot, heat olive oil over medium heat and sauté diced onion for 7-8 minutes. Add garlic and green chilis, sauté for another 2-3 minutes.

Mix in spices, salt, and pepper. Add remaining ingredients except chicken, starting with 2 cups of broth.

Simmer briefly, then blend 1 to 1 1/2 cups of the mixture until smooth and return to the pot. Stir in the chicken and simmer for 10-15 minutes on low heat, adding more broth if needed.

Stir in lime juice and serve with fresh cilantro and tortilla chips.
