Blueberry Mojito

This easy blueberry mojito is the perfect summer refreshment. It's easy to make, perfectly sweet, and made with just fresh blueberries, lime, mint, white rum and a touch of sugar.

Ingredients

  • ¼ cup fresh blueberries
  • 2 ounces white rum 1/4 cup
  • 2 tbsp fresh lime juice about 1 lime
  • 1 tbsp honey simple syrup
  • 10 fresh mint leaves
  • Club soda/sparkling water to top about 2-4 tablespoons

Instructions

  • To a small pot on the stove, add 1/4 cup of honey plus 1/4 cup of water and heat until the honey dissolves. You only need 1 tablespoon of this for 1 serving, so reserve the rest in the fridge, it'll keep for up to 5 days. Set aside to cool.
  • Add the mint leaves, blueberries and lime juice to the bottom of a glass.
  • Use a wooden spoon or cocktail muddler to mash, or muddle, the blueberries and mint leaves for about 30 seconds. (see notes if you prefer a smooth texture with no blueberry/mint pieces)
  • Add the simple syrup once cooled, plus the rum stir to combine.
  • Top with ice and fill the rest of the glass with sparkling water, club soda or seltzer.
  • Serve with extra blueberries, lime wedges and mint leaves if desired. Enjoy!

Notes

Feel free to decrease the amount of sweetener used to make this more of a "skinny" mojito. 
You can easily make this recipe in advance, just wait to pour it over ice until you're ready to serve. You don't want it to get watered down.
If you don't want any large bits of blueberry or mint in the drink, you can instead blend the final mojito in a blender and then strain it through a fine mesh strainer. If you're doing this, I recommend decreasing the amount of mint used slightly so it isn't too strong.
This recipe makes one serving, if you want to make enough for a crowd, hover your mouse over the "1" in the serving section to drag and scale for the number of servings you want. Follow all of the same steps, but make in a pitcher instead of individual glasses. 
For easy math, 2 ounces is about 1/4 cup and 1 ounce is 2 tablespoons.
