Pineapple Mango Popsicles

by: claire cary

These tropical pineapple mango popsicles are the perfect way to cool down on a hot day. They're made with just a few simple & fresh ingredients, and are perfectly sweet and creamy. Plus, they're completely refined sugar free!

Ingredients

  • 3 mangoes about 2 cups chopped
  • 1 ½ cups chopped pineapple
  • ½ cup greek yogurt I used Kite Hill Dairy Free Vanilla Greek Style
  • 2 tbsp lime juice
  • 2 tbsp honey or more, to taste
  • 2 tsp vanilla

Instructions

  • Add all ingredients to a high speed blender or food processor.
  • Process until completely smooth.
  • Taste and adjust sweetness as desired.
  • Transfer to a popsicle mold and fill just below the top. Insert the popsicle sticks.
  • Place in the freezer for at least 6 hours. Enjoy!

Notes

I recommend using ataulfo (also known as honey or Champagne) mangoes which don't have as much pulp as other varieties and are a bit sweeter.
You can easily get away with using just the pineapple and mango if that's all you have. The other ingredients enhance the flavor, but those two are the center of attention.
Once prepared, these popsicles will keep in the freezer for up to 3 months.
