Healthy Vegan Cookie Dough

This vegan healthy cookie dough is the perfect recipe to whip up when you're craving something sweet! It's made with just a few simple ingredients, refined sugar free and even paleo.

Ingredients

  • 1 cup blanched almond flour
  • 2 tbsp coconut flour
  • 3 tbsp vegan butter melted
  • 4 tbsp maple syrup
  • 1 tsp vanilla extract
  • pinch of salt
  • ¼ cup chocolate chips or to taste

Instructions

  • Add the butter to a bowl and melt in the microwave.
  • Whisk in the maple syrup and vanilla.
  • Add all remaining ingredients to the bowl except for the chocolate chips and mix well to combine.
  • Fold in the chocolate chips.
  • Taste and adjust flavors as desired. I sometimes add a sprinkle of granulated sugar for a slightly sweeter version, but up to you!
  • Stick in the fridge for about 20 minutes to harden. This will also help the flavors combine really well.
  • Transfer to bowls to serve, or roll into balls.

Notes

The coconut flour can be subbed with tapioca starch, though this will change the flavor/texture a bit.
