Beetroot & Berry Smoothie

This beet smoothie is creamy, easy to make and doesn't even taste like beets! It's refreshing, perfect for a quick snack or light breakfast and the vibrant pink color will impress just about anyone.

Ingredients

  • 1 small peeled beet about 3/4 cup diced
  • 1 cup frozen mixed berries
  • 1 cup frozen pineapple
  • ½ cup vanilla unsweetened greek yogurt dairy free or regular
  • 1 tablespoon chia seeds
  • 2 tablespoons lime juice
  • 1/2-1 cup milk of choice I used almond

Instructions

  • Peel and finely dice the beet and add to a high speed blender.
  • Add all remaining ingredients. Blend until completely smooth, adding more milk as needed to blend.
  • Taste and adjust flavors as desired. If you prefer it more sweet, you can add banana, honey or 1-2 pitted dates.
  • Pour into glasses & enjoy right away!

Notes

You can use fresh fruit instead of frozen if you prefer, but you will need less milk to get it to blend. 
For extra protein, feel free to add a scoop of your favorite protein powder, collagen peptides or some extra chia seeds or hemp seeds.
