Blueberry Cauliflower Smoothie

This blueberry cauliflower smoothie is creamy, easy to make and perfectly sweet! It's the perfect mid-day pick me up or light breakfast for a busy morning.

Ingredients

  • 1 cup frozen cauliflower florets
  • ½ cup frozen blueberries
  • ½ cup frozen blackberries
  • 1 ripe banana can sub mango or pineapple
  • 1 - 1 ½ cup coconut water
  • Juice form 1 lime lemon is good too, but I prefer lime!
  • 1 tbsp chia seeds can sub hemp or flax
  • 2 tbsp almond butter

Instructions

  • Add all ingredients to a high speed blender, starting with just 1 cup of coconut water.
  • Blend until completely smooth, adding more coconut water as needed to thin. Taste and adjust flavors as desired.
  • If you prefer it thicker, add a bit more frozen cauliflower, if you like it sweet you can add a bit of honey or your favorite protein powder which often contain stevia.
  • Transfer to glasses and enjoy immediately.

Notes

You can sub the coconut water for almond milk or another non-dairy milk, but coconut water adds some more natural sweetness and tastes really delicious in this recipe!
If you don't have chia seeds, you can leave them out or sub flax or hemp.
