Ingredients

Wet

  • 9 tablespoons pureed banana 9 tbsp = 1/2 cup + 1 tbsp
  • ¼ cup oil
  • cup coconut sugar
  • 1 large egg
  • 1 teaspoon vanilla

Dry

  • 1 cup gluten free all purpose flour
  • ¼ cup oat flour
  • 1 teaspoon baking powder
  • 1/4-1/2 teaspoon cinnamon

Glaze

  • 1 cup chocolate chips
  • 2 tablespoons coconut oil

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Grease a 6 cavity donut pan and set aside.
  • Puree the (ripe) bananas in your blender and measure.
  • Add to a bowl with all wet ingredients and whisk to combine.
  • Add in the dry ingredients, making sure to spoon and level the flour, don't scoop from the bag.
  • Use a rubber spatula to mix together, the batter will be fairly thick.
  • I like to add the batter to a zip lock bag or piping bag and cut off the tip to squeeze into the pan, but you can also just use a spoon to add to the pan.
  • Bake for 8-11 minutes or until a toothpick comes out clean.
  • Let cool completely.
  • Add the chocolate chips and coconut oil to a bowl and microwave at 30 second intervals, stirring between each, until completely melted.
  • Dip the donuts in the chocolate, then add to a wire rack. Enjoy!

Notes

If you are not gluten free, sub the gluten free all purpose flour for regular all purpose flour, but still use the oat flour.
You can use any kind of granulated sugar here, white, brown, coconut etc.
I do not recommend mashing the banana, puree is best for the texture!
