Ingredients

  • 1 cup uncooked quinoa
  • 2 cups water or vegetable/chicken broth
  • Pinch of salt about 1/8 teaspoon

Instructions

  • Rinse the quinoa and add to a pot with the water and salt.
  • Bring to a rapid boil.
  • Reduce heat to low and let simmer, uncovered, until most of the liquid is absorbed.
  • After about 15 minutes or when the liquid is absorbed, remove from the heat and cover.
  • Let steam for about 10 minutes to finish cooking.
  • Fluff with a fork and enjoy!

Notes

Once prepared, cooked quinoa will keep in the fridge for about 1 week.
While cooking, quinoa expands by about 3 times. So, 1 cup of dry quinoa will yield about 3 cups of cooked quinoa.
For more flavor, you can use vegetable or chicken broth in place of water.
