Gluten Free Chocolate Donuts

These gluten free chocolate donuts are rich, easy to make and can easily be made refined sugar free! With a gorgeous chocolate frosting and baked donut base, this recipe is perfect for the chocolate lover!

Ingredients

Wet

  • cup light brown sugar can sub coconut for RSF
  • 1 large egg
  • ¼ cup oil
  • ½ cup non-dairy milk I used almond
  • 1 tsp vanilla extract

Dry

Frosting

  • cup semi sweet chocolate chips
  • 2 tbsp refined coconut oil or dairy free butter
  • optional: 1 tbsp light corn syrup gives that classic shiny appearance!

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Grease two, 6 cavity donut pans (this recipe makes 8, so only need to grease 8). If you only have one pan you can just do this in two batches! Even if your pan says non-stick, grease it anyway!
  • Whisk together all wet ingredients in a bowl until smooth.
  • Whisk in the dry ingredients, making sure to spoon and level the flour.
  • Whisk until smooth. Use a 1/4 measuring cup to scoop into the prepared pan.
  • Bake for 8-11 minutes, or until a toothpick comes out clean. Mine are usually perfect at 9 1/2 minutes. These can over bake really easily, so keep a close eye!
  • Remove from the oven and let cool in the pan for 10 minutes, then flip onto a cooling rack. They should pop right out, but if you have any issues, take a thin knife and carefully run it around the donut, then flip and you should be good.
  • Let cool.
  • Once cool, add all ingredients for the frosting to a bowl and microwave in 30 second intervals, stirring between each interval until full melted.
  • Dip the top of each donut in the frosting and top with sprinkles. Enjoy!

Notes

I used refined avocado oil, melted refined coconut or vegetable oil also work.
Sub the semi-sweet chocolate chips for a stevia sweetened chocolate chip like Lily's for a refined sugar free version!
I pretty always use the Bob's Red Mill 1:1 Flour. It always yields consistent results and when used properly, you can't tell the difference between that and regular flour! If you use another blend, just make sure it has xanthan gum in the mix.
