This roasted red pepper spicy vodka pasta is rich, creamy, and so easy to make. It’s vegan friendly, ready in about 30 minutes and easy, healthier comfort food at its finest!
In a skillet, heat oil or butter over medium/low heat, sauté diced onion until translucent, then add garlic for 1-2 minutes.
Add vodka and simmer until evaporated, then sauté tomato paste.
Blend the onion mixture with remaining ingredients until smooth, adjust flavors, and pour over the cooked pasta.
Stir to combine, top with fresh basil, and enjoy!
