TUSCAN WHITE BEAN SOUP

This Tuscan white bean soup is made in one pot, ready in 30 minutes and perfect for meal prep! It’s vegan, gluten free, full of protein and perfect with some rustic (gluten free!) bread for dipping.

First, saute the onion, carrot and celery. 

Add all remaining  ingredients and simmer for 20 minutes. 

Blend 2 cups worth for a creamy texture, then stir in kale. 

Serve hot with your favorite bread and enjoy!
