This sweet potato black bean vegan burrito bowl is the ultimate dinner for a flavorful weeknight meal and is perfect for meal prep!
Peel and chop the sweet potato. Toss it with olive oil, paprika, garlic, and salt before placing it on a lined baking tray.
Add thinly sliced onion and peppers, drizzle with olive oil, and bake for 30 minutes.
Warm drained black beans with chili powder and salt over low heat.
Serve the roasted veggies and black beans over rice with corn and avocado, and drizzle with dressing or cashew queso. Enjoy!
