This sweet potato black bean vegan burrito bowl is the ultimate dinner for a flavorful weeknight meal and is perfect for meal prep!

Peel and chop the sweet potato, then toss it with olive oil, paprika, garlic, and salt before placing it on a lined baking tray.

Add thinly sliced onion and peppers, drizzle with olive oil, and bake for 30 minutes.

Warm drained black beans with chili powder and salt in a pan.
