In a mixing bowl, combine the flour (making sure to spoon and level to measure) , brown sugar, yeast, baking powder and salt. Whisk to combine.
Add in the greek yogurt and mix with a rubber spatula, then use your hands to fully combine. It helps to lightly grease your hands as it get sticky!
Preheat your air fryer to 350 Fahrenheit.
Roll the dough into 8 even sized balls.
Brush a bit of melted butter on top, then roll in the everything bagel seasoning. You can also use poppy seeds, sesame seeds or leave them plain with a bit of butter and salt.
Add to your preheated air fryer and air fry for 10-12 minutes.
Remove and let cool for about 15-20 minutes. Cooling is important here as it helps the texture set.
Enjoy as is or serve with cream cheese, butter, jam etc!
