In a shallow bowl or baking dish, whisk together the eggs, milk, sugar, cinnamon, vanilla and salt.
Heat a large skillet over medium heat and melt the butter.
Once melted, dip about 2 slices of bread into the egg mixture and coat well on each side. I like to let it sit for about 45 seconds to really soak it up. You can do longer or shorter. The longer you do, the more moist the toast will be.
Add to your heated pan and let fry on each side until browned, about 1-2 minutes.
Place on a wire rack while you repeat with the rest of the bread. This will prevent it from getting soggy. You can also preheat the oven to about 200 degrees and let it rest in there so it stays warm.
Serve with fresh fruit like berries or banana, maple syrup, chocolate chips, butter - whatever you like! Enjoy!
