Preheat the oven to 400 degrees Fahrenheit.
Line a baking sheet with parchment paper and set aside.
Wash and cube the potatoes, add to a bowl, then toss with the the olive oil followed by all spices. You can also cut them into fry/wedge shapes, I just think cubing them works best in a bowl.
Add the prepared baking sheet and roast for about 30 minutes or until fork tender.
Meanwhile, heat a skillet over medium heat and add the ground beef.
Cook until browned, then toss in all spices. I like to add in a tablespoon of butter to make a richer flavor, but this is optional.
Once everything is done, add a layer of lettuce to your bowl, then top with the tomatoes, beef, sweet potatoes, onions and cheese. Pickles would be good here too! It helps to let the beef and potatoes cool for a few minutes before adding to ensure they don't wilt the lettuce.
Whisk together all ingredients for the sauce, then drizzle on top. Enjoy!
