Sweet Potato Burger Bowls

These sweet potato burger bowls are the ultimate meal prep recipe! They're the perfect way to get your burger fix but with more veggies like roasted sweet potatoes and a homemade special sauce to top it all off.

Ingredients

Beef

  • 1 pound ground beef
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Sweet Potatoes

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika

Bowl

  • 4 cups shredded lettuce
  • 1 cup grape or cherry tomatoes sliced in half
  • ½ red onion sliced
  • ¾ cup shredded cheddar cheese

Special Sauce

  • ¼ cup mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon ketchup
  • 1 tablespoon sweet relish
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Line a baking sheet with parchment paper and set aside.
  • Wash and cube the potatoes, add to a bowl, then toss with the the olive oil followed by all spices. You can also cut them into fry/wedge shapes, I just think cubing them works best in a bowl.
  • Add the prepared baking sheet and roast for about 30 minutes or until fork tender.
  • Meanwhile, heat a skillet over medium heat and add the ground beef.
  • Cook until browned, then toss in all spices. I like to add in a tablespoon of butter to make a richer flavor, but this is optional.
  • Once everything is done, add a layer of lettuce to your bowl, then top with the tomatoes, beef, sweet potatoes, onions and cheese. Pickles would be good here too! It helps to let the beef and potatoes cool for a few minutes before adding to ensure they don't wilt the lettuce.
  • Whisk together all ingredients for the sauce, then drizzle on top. Enjoy!

Notes

I used ground beef here, but you can use ground turkey or chicken if you prefer!
I used yellow mustard for the special sauce, but any kind of mustard will work.
