First, roast up the veggies, you'll need:
sweet potatoes red bell peppers red onions
Roast until fork tender.
Assemble your bowls with cilantro lime rice, roasted veggies, black beans & the spicy tahini dressing.
Serve warm or store away in the fridge for meal prep!
