Oodles of noodles! You probably know by now that I’m a big fan of all types of Asian noodles. I’m always looking for quick and easy dinner recipes when I just can’t be bothered to cook anything fancy but still want something with lots of flavor.
All of these recipes are made with rice noodles to keep them gluten free and they’re all vegetarian and mostly vegan as well.
Many Asian noodle dishes will use wheat noodles, rice noodles or glass noodles. I always go with rice noodles since the white and brown varieties work well in different types of recipes.
I often like to pair them with my teriyaki salmon or chicken for a little extra protein, but if you want to keep it plant-based, my teriyaki tofu or air fried tofu are all delicious with these recipes as well.
1) Garlic Sesame Noodles
One of the OG and most popular Eat With Clarity recipes for good reason! With toasted sesame oil, tahini and sesame seeds for a rich flavor, these garlic sesame noodles are ready in just 20 minutes and perfect with veggies, chicken or salmon.

4) Red Curry Noodles
These Thai red curry noodles are one of my absolute favorite recipes. They’re extra saucy and therefore flavorful and come together in just about 15 minutes!

I’m not usually a big mushroom gal, but when they’re paired with noodles and my favorite teriyaki sauce, I’ll pretty much eat anything. These vegan teriyaki Asian noodles are quick, easy and perfect for meal prep.
