These gluten free rice krispies treats are the perfect dessert for summer. With crushed graham crackers, melty marshmallows and just the right amount of chocolate, this simple recipe is a total crowd pleaser.

It’s s’mores season and I may or may not be overdoing it this year! S’mores cookies, s’mores bars and now these s’mores gluten free rice krispie treats. I can’t get enough!

Of course, if you aren’t feeling the whole S’mores thing, you can easily leave out the graham crackers and chocolate and just keep these like regular gluten free rice krispies.

They are so good either way, and extra gooey just the way I like them. This definitely isn’t the most healthy recipe, but not every dessert needs to be! I’m a big believer in treating yourself, and these s’mores rice krispies are the perfect way to do that. Try my pistachio chocolate chip cookies next!

Before we get started…

  • I suggest letting these set at room temperature instead of in the fridge. They will firm up a bit too much in the fridge and I think the texture is best at room temperature!
  • Be sure to stir the marshmallow mixture regularly so nothing burns.
  • Be sure to let the mixture cool just for about 5-10 minutes before adding the chocolate so it doesn’t melt completely. It will melt a little, we just don’t want it to melt all the way.

How to make gluten free rice krispies treats

Step 1: Melt the butter in a large pan or dutch oven.

Step 2: Add in the marshmallows and melt over medium/low heat, stirring occasionally until fully melted.

Step 3: Add in the vanilla, rice krispies and crushed graham crackers. Fold to combine. it helps to lightly grease your spatula so it’s not too sticky.

Step 4: Let cool for 5-10 minutes, then fold in the chopped chocolate just until combined.

Step 5: Press into a greased 9×9 inch baking pan. I like to press on extra marshmallows, chocolate and graham crackers on top, but this is optional!

Step 6: Set aside to set for 1 hour, then slice into 12-16 squares and enjoy!

Key ingredients

Marshmallows. The star of the show! Most marshmallows are gluten free, but always check the ingredients to be safe!

Rice Krispies Cereal. You can use any type of puffed rice cereal, I found one at Whole Foods that is gluten free. Kellog’s makes a version that is made in a dedicated gluten free facility for those like me with Celiac or a severe gluten allergy!

Regular Kellogg’s Rice Krispies are not gluten free. There is a malt flavoring (extracted from barley usually), which can affect those with Celiac or those with a high sensitivity to gluten. Be sure to check labels!

Graham Crackers. Whole Foods and many other grocery stores carry gluten free graham crackers, or you can buy them on Amazon.

Butter. You will need 1/2 cup of butter, which is equal to 1 stick. I like unsalted butter here, but salted will also work.

Chocolate. I used good old Hershey’s chocolate here because that just screams s’mores to me, but whatever chocolate you have is fine. You can use bars or chips.

Make them gooey!

These gluten free rice krispies are already really gooey as written, but you can definitely take it up a notch if you prefer!

All you need to do is add more marshmallows to the mix. This recipe calls for 22 ounces, which is more than some recipes, but you can use more to create a really gooey texture.

Also, if you don’t want them to be s’mores flavored, you are totally able to leave out the chocolate and graham crackers. Just proceed with the recipe as usual but without those two ingredients!

Can I make these in advance?

Yes! You can easily make these gluten free rice krispies treats ahead of time since they hold up really well. Just be sure to keep them covered in an air tight container or wrapped tightly in foil so they don’t dry out.

You can also freeze rice krispie treats! I suggest slicing them and wrapping very tightly in plastic wrap so they don’t get freezer burn. Then just let them defrost before enjoying!

Are marshmallows gluten free?

Yes, most marshmallows are gluten free, but many contain gelatin so they are not vegan. The brand Dandies makes great vegan marshmallows though and I promise you can’t tell the difference if you are looking to make this recipe vegan.

    Kellogg’s Rice Krispies are not gluten free. There is a malt flavoring, which can affect those with Celiac or those with a high sensitivity to gluten. Kellogg’s does make a gluten free version of their Rice Krispies, but not all stores carry it. I suggest reading the labels of any puffed cereal to insure it is gluten free.
