These spicy ramen noodles are so easy to make, ready in about 20 minutes and full of flavor. Serve as is or with your favorite veggies and choice of protein. I love tofu, ground beef, salmon, or chicken!

I’m back with yet another easy and delicious noodle recipe! We’re combining my favorite ramen noodles and spicy noodles to make spicy ramen noodles. And let me tell you these are *delicious.*

They’re so easy to make, require just a few simple, pantry staple ingredients and are completely vegan, gluten free (just use rice ramen like I did!) and ready in 20 minutes.

You can add some ground meat like in my Korean noodles, or serve it alongside some teriyaki salmon or crispy tofu for extra protein.

Key ingredients

Ramen Noodles. Most ramen noodles aren’t gluten free, so I used a rice based ramen for this recipe. Really any kind of thin noodle will work here, it’s the sauce that matters.

Green onion, garlic, ginger. We’ll saute the green onion, garlic and ginger in oil to bring out a lot of flavor.

Chili garlic sauce/sriracha. This is where the spice comes from! If you are sensitive to spice, start small and add more as needed to taste.

Soy sauce/tamari. Be sure to use low sodium as this will get way too salty with the full strength stuff. If you only have regular, just half the amount to start.

Honey. Lastly, we’ll add some honey, rice vinegar and sesame oil to balance out all of the spicy flavor. To make it vegan, just use maple syrup instead of honey.

How to make spicy ramen

Cook noodles. Bring a pot of water to a boil and cook noodles according to package instructions. Ramen cook much more quickly than other noodles, so be sure to check the package for proper instructions.

Saute. Add the chopped green onion, ginger, garlic and oil to a small sauce pan and saute for about 3-5 minutes.

Make sauce. Add in all remaining sauce ingredients and whisk well. Simmer over low heat for about 5 minutes.

Combine. Combine the cooked noodles with the sauce and let simmer for a few minutes to let the flavors blend.

Taste. Taste and adjust flavors as desired. If it’s too spicy you can add in more soy sauce and sweetener to help balance it out. if it’s not spicy enough, just add in more sriracha.

Serve. Serve with fresh green onion, cilantro and more red pepper flakes to taste! Be sure to taste before adding more red pepper since these can get super spicy very quickly if you aren’t careful!

Variations

Use different noodles: you can swap ramen noodles with another noodle like wide rice noodles or soba noodles.

Add in protein: You can toss in some ground beef or turkey, or make extra sauce and chop up some plain chicken breast or shrimp and throw that in the mix. Feel free to get creative!

Add in veggies: For this, I love sauteed broccoli, julienned carrots, bell peppers, cabbage, mushrooms or edamame.

Add peanut butter: A little bit of peanut butter can do so much in a simple dish like this. I’d start with 2 tablespoons and adjust as needed.

Since we are using toasted sesame oil, you can opt for tahini instead of peanut butter which would compliment the flavors quite well.

How to store

Once prepared, these spicy ramen noodles will keep in the fridge for 3-5 days. Let them cool completely before transferring to an air tight container.

Just reheat in the microwave or on the stove with a splash of water, chicken broth or oil until warm.

You can also serve them cold like a noodle salad with extra veggies!

Ingredients

  • 8 ounces ramen noodles
  • ⅓ cup chopped green onion just the white/light green part
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon oil
  • ¼ cup low sodium soy sauce or tamari
  • 2 tablespoons chili garlic sauce
  • 1 tablespoon sriracha more or less to taste
  • 1 tablespoon honey, maple syrup or brown sugar
  • 1 tablespoon rice vinegar
  • 2 taaspoons toasted sesame oil
  • ½ teaspoon red pepper flakes

    pretty good and easy to make. definitely a bit salty for my typical palette but the spice was great! i would recommend letting the sauce sit for a bit first to develop more flavour and get more umami 🙂5 stars

    These were so good and easy to make. There were pretty spicy. I didn’t have sriracha sauce so I skipped that but they were still plenty spicy. I had these with shrimp and broccoli for a complete meal. I’ll be making these again.5 stars

    This recipe is killer!!! Made it a hundred times. I make homemade ramen and use these noodles in the soup. I’m no chef, I’m just a Mom that loves to cook. It is very spicy, I half all the spicy ingredients. You can always add more honey to get to the spice level you want. Definitely try this recipe!!!5 stars

    Loved the sauce flavors. I cooked my brown rice ramen noodles in homemade chicken stock and added thinly sliced red onion, green pepper, red and green cabbage and carrots along with some leftover chicken. Called it my Chinese chicken soup cure for Covid. I used plenty of sambal oelek for some sinus clearing factor.5 stars

    This spicy ramen is a fantastic recipe. It is fairly quick to pull together and the sauce is delicious. I like to make mine on the spicy side, add in all my favorite veggies and top it off with a fried egg. I keep a bag of brown rice ramen noodles in my staples just to make a recipe like this.
