Before we get started…
- Franks Hot Sauce is most commonly used in buffalo chicken dip, but I had a buffalo sauce from Primal Kitchen on hand so that is what I used!
- I used a cast iron pan for baking, but any pan that’s about 8 or 9 inches or similar is fine!

How to make gluten free buffalo chicken dip
Preheat the oven to 400 degrees Fahrenheit. Grease an 8 or 9 inch pan, I used a cast iron pan, but any kind of baking dish will work!
In a medium mixing bowl, whisk together the cream cheese, greek yogurt, buffalo sauce, garlic powder and onion powder until well combined. Fold in the chicken, green onion, mozzarella and 1/2 cup of the cheddar. Mix everything well to combine.

Transfer to your prepared pan and spread evenly. Top with the remaining 1 cup of cheddar cheese.
Bake for 15-20 minutes or until the cheese is bubbling and slightly golden on top. Sprinkle with diced green onion and serve with veggies, chips etc. and enjoy! Try my buffalo chicken taquitos or hot honey buffalo chicken tenders next!

What kind of chicken should I use?
Buffalo chicken dip can be made using shredded boiled chicken breasts or thighs, rotisserie chicken, or even leftover turkey. Anything works! You could even use canned chicken, though my preference is definitely shredded rotisserie chicken. Either way, I suggest shredded instead of dicing your chicken.

Prep in advance!
You can either prepare a few parts of this dip ahead of time or the whole thing and store in the fridge until you’re ready to bake and serve.
The easiest way to save time is to cook and shred the chicken ahead of time. Since we’re using rotisserie chicken here, you don’t need to cook it, but shredding it first or buying it pre-shred will save a lot of time. You can also prepare the entire buffalo chicken dip recipe, including adding the cheese on top. Then just cover your prepared dip with plastic wrap, and store in the fridge until ready to bake!
I do not recommend freezing it- either before or after baking because the cheese just won’t hold up as well when thawed.

Serving suggestions
I could just eat this dip right from the pot with a fork, but my favorite way to serve it is with chips to add some crunch! The dip itself is super cheesy and creamy so I love a sturdy corn chip for dipping to help balance the textures. For a main dish, I love serving with my gluten free quesadillas. Some other ideas:
- Tortilla chips, pretzels, crackers
- Veggies like celery, carrot sticks or mini bell peppers
- Pita bread or sliced rustic bread
