These sweet potato burger bowls are the ultimate meal prep recipe! They’re the perfect way to get your burger fix but with more veggies like roasted sweet potatoes and a homemade special sauce to top it all off.

This ground beef burger bowl recipe is kind of like a burger salad since the base is lettuce and we aren’t using a grain like quinoa or rice like I do in most of my bowl recipes. It’s a lighter but still just as flavorful way to get your burger craving satisfied and is perfect for meal prep.

This recipe features crispy roasted sweet potatoes, perfectly seasoned ground beef, lots of crisp veggies and a homemade special sauce that rounds out all the flavors.

These burger bowls come together quickly and easily and are naturally gluten free, paleo friendly and dairy free. If you love this recipe, try my sweet potato and lemon chicken bowls or air fryer turkey burgers next!

Before we get started…

  • I used ground beef here, but you can use ground turkey or chicken if you prefer!
  • Be sure you don’t over cook the beef! Cook until browned on the outside and just barely pink inside. This usually takes about 7-8 minutes over medium heat. You want to ensure the internal temperature is 160 degrees Fahrenheit, but cooking for too long will dry it out.
  • I didn’t use any oil to cook the beef because it releases a lot of fat as it cooks, but if you are using a very lean beaf like 95%, I suggest adding a bit of oil or butter to the pan.

How to make a burger bowl

Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.

Wash and cube the potatoes, add to a bowl, then toss with the the olive oil followed by all spices. You can also cut them into fry/wedge shapes, I just think cubing them works best in a bowl.

Add the prepared baking sheet and roast for about 30 minutes or until fork tender.

Meanwhile, heat a skillet over medium heat and add the ground beef.

Cook until browned, then toss in all spices. I like to add in a tablespoon of butter to make a richer flavor, but this is optional.

Once everything is done, add a layer of lettuce to your bowl, then top with the tomatoes, beef, sweet potatoes, onions and cheese. Pickles would be good here too! It helps to let the beef and potatoes cool for a few minutes before adding to ensure they don’t wilt the lettuce.

Whisk together all ingredients for the sauce, then drizzle on top. Enjoy and try my gluten free mongolian beef or greek meatball bowls next!

Other topping ideas!

  • Crispy bacon
  • Grilled veggies like zucchini, peppers, and onions
  • Shredded cabbage
  • Avocado
  • Hot peppers like jalapeños or pepperoncini
  • Sauteed Mushrooms
  • Shredded cheese
  • Fried egg
  • Fresh herbs like dill or parsley
  • Regular potatoes instead of sweet potatoes

How to store

Once prepared, these burger bowls will keep in the fridge for 3-5 days. I like to store all the components separately to prevent any of the veggies getting soggy. I like to warm up the beef and potatoes before assembling the bowls again, but you can keep everything cold if you prefer more of a salad feel!

What is special sauce?

If you’ve ever ordered a burger from a restaurant, you’re probably familiar with the term special sauce. Special sauce is a burger sauce made up of mayonnaise, mustard, ketchup, relish and spices. It’s a delicious combination of creamy, sweet, tangy and savory flavors.

Ingredients

Beef

  • 1 pound ground beef
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Sweet Potatoes

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika

Bowl

  • 4 cups shredded lettuce
  • 1 cup grape or cherry tomatoes sliced in half
  • ½ red onion sliced
  • ¾ cup shredded cheddar cheese

Special Sauce

  • ¼ cup mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon ketchup
  • 1 tablespoon sweet relish
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Notes
