Iced Strawberry Latte
This iced strawberry latte is the ultimate way to start your day this Summer. It’s sweetened naturally with honey, so easy to make and can be customized based on your own preferences.

I love an iced latte pretty much all year, but this iced strawberry latte is a spring and summer staple and I cannot stop making it! It has a homemade strawberry sauce/syrup that is sweetened naturally with just pure honey and fresh strawberries, then topped with your milk of choice and espresso.
It’s so easy to make, and paired with my lemon poppy seed overnight oats, the ultimate Spring or summer breakfast. This recipe is totally vegan friendly- just use a non-dairy milk and swap the honey for either maple syrup or granulated sugar.
Tips before we get started!
- I opted against straining the strawberry sauce because I wanted it to be more like a sauce than a syrup. However, if you prefer a thinner more liquidy texture, you can strain it after it simmers on the stove through a fine mesh strainer.
- I like to brew my espresso and then let it cool for a few minutes so it doesn’t melt the ice and dilute the latte.
- Any kind of milk will work here! I used coconut because that’s what I had on hand and I think the flavor pairs really well with the strawberry, but you can use whole milk, almond milk or even some of your favorite creamer to make it a bit more rich and creamy.

How to make a strawberry latte
Add your chopped strawberries to a blender with the honey. Add more or less honey depending on your sweetness preference.
Blend until smooth. Transfer to a small pot on the stove and heat over medium/high heat. Bring to a low boil, then reduce the heat to medium/low and simmer for 10 minutes to let the flavor deepen and the sauce thicken. Set aside to cool.
Once cool, add about 2 tablespoons each to two glasses (or more as desired! you will have more strawberry sauce than the two lattes need), and top with ice. Pour on top the milk, then add your espresso. Mix to combine and enjoy! Serve alongside my favorite gluten free pancakes!


Variations
Use a different berry! I love the combination of strawberries and espresso, but you can really use any berry here! Blueberries are my next favorite, but blackberries or raspberries are also delicious.
WANT TO SAVE THIS RECIPE?
Make strawberry milk. Instead of adding the strawberry sauce to the cup and the milk on top, you can mix up the strawberry sauce and milk together to make a strawberry milk, then add the espresso on top.
Make it sweeter. This recipe isn’t overly sweet, I used 3 tablespoons of honey for the strawberry sauce which felt perfect, but feel free to add more or even a few drops of stevia to sweeten further.

Storage tips
You can absolutely prep this in advance and keep in the fridge to make your mornings easier! One way is to just make the strawberry sauce and keep in a jar and then assemble the latte in the morning.
A second option is to mix the strawberry sauce, milk and espresso together and store in the fridge without any ice, and then add ice in the morning to ensure it doesn’t dilute.
